The early dry spring set the stage for concentrated flavors, while the mild and steady growing season helped the fruit get fully ripe at surprisingly low sugars and hence lower alcohol levels. Flavors include white peach, kafir lime, lychee nut, beeswax, ripe fig, and pineapple, along with stones, oyster shells, and freshly baled straw.
