• 100% Chenin Blanc • 32 year old dry farmed vines on decomposed granite and clay shale • Hand harvested over several pickings over 1 month • Whole bunch pressed and fermented with indigenous yeast until fermentation stopped on its own • Fermentation and maturation occurred in oak barrels
